Saturday Morning Pancakes

Growing up in the Midwest (yes I survived winters in IN, IL and OH before coming back to the glorious South at age 8), whenever I was asked what my favorite foods were there was no debate.  My answer was always a tie between Bob Evans' blueberry pancakes and Bakers Square's French Silk Pie.  
But instead of relying on these restaurants any longer, I now have fool proof recipes for both which I make on a very regular basis!  First we'll cover the much anticipated and often requested pancake recipe.  



Jason gave me a cookbook a few years ago based on a recommendation from Sara Foster's website (those of you foodies around Chapel Hill and Durham know her from her excellent restaurant Fosters).  She is one of Martha Stewart's buddies.  Anyhow, the cookbook is called The Heritage of Southern Cooking by Camille Glenn.  In this book we have found our absolute go-to pancake recipe.  It tops all others I've tried!  So please toss out your boxed, processed just-add-water-to-it mix and see if these delicious cakes don't knock your socks off!   


Sour Cream Pancakes
1 1/2  cup flour
pinch of salt
2 1/2 t baking powder
1/4 t baking soda
1 t sugar
2 large eggs
6 T butter, melted
2/3 cup sour cream
2/3 cup milk
1 cup blueberries (I probably add 1 1/2 cups, of course these are optional but oh so much better with them)

1-Combine the flour, salt, baking powder, baking soda and sugar.
2-Beat the eggs in a roomy bowl until fluffy.  Add the melted butter, sour cream and milk.
3-Add the dry ingredients to the egg mixture and beat well.  Fold the berries in gently so they will not bleed.
4-Heat a griddle or skillet over high heat and brush it with some butter before cooking each batch of pancakes.  When the underside is golden brown, turn the pancake.
*This is a thick batter.  For a thinner pancake (which I'm not sure why you'd want one), add 1/4 cup milk.

Check out the thickness!  At least 3/4 in.

oh my word...if we let JD go to your house for Saturday morning pancakes he will NEVER want to have breakfast at our house again. I will definitely try this recipe ASAP though!!

Ok... not this Saturday... apparently (I also forgot my mom and sis are coming into town that morning anyway) but June 11th, we'll be there! :) And maybe I could finally take the time to teach you how to use your crock-pot then!!! :)
